My Stang with a manual seems to have quite a delay from the time I let off of the gas until it actually starts to wind down. Has anyone else noticed this?

yah mine to..it takes time for the gears in the manual transmission to unwind

Same with the auto. I think the Mustangs all have fly-by-wire now don't they? That would explain it. I get almost no braking power off the motor unless I downshift.

I have the Auto and when I go around a conner and ease the peddle to the floor it takes about 10 seconds for the engine to respond is this normal

I've noticed a slight pause but no way near 10 seconds.

Mine does this too, and I have an auto, it took awhile to get used to, I hate using my brakes.

According to a thred on another forum, the SCT Xcalibrator with the base tune eliminates the lag. That alone would make me buy one.
