Over the weekend, my Stang started acting up. It is cutting out rather badly when I try to accelerate. At the slower speeds, 0-50, it sputters almost as if maybe its flooded but when I get to 65+, I have no problems. My guess is I have an injector going bad, a plug fouling out, or I need to replace my fuel filter.
Any suggestions/feedback appreciated.

first replace the fuel filter (quick easy job that is often overlooked and should be done anyways).
theni would pull the plugs and check them over/read them. if you see that one or two have either carbon deposits you know its rich and then i would consider ohming the injectors (because you could have a leaky one)
if one or two look really bad do a compression test (for peace of mind and so that you know there arent any major issues).
i would maybe check the TPS, they can sometimes cause similar issues.

I pulled a couple of my plugs and they definitely need to be changed. I've not had this car very long and I'm guessing by the way they look, they've probably never been changed. I thought about going with the NGK IX iridium plugs or with Bosch platinum. What would you guys suggest?

NGK TR6 or Motorcraft AGSF 22c (new part number SP 505). Both are copper plugs, which are better conductors and are one step colder than factory. Only downside is you will have to replace them every 1-2 years, depending on driving style and how many miles you put on the car. BUT, they are cheaper than platinums... and platinum plugs are junk anyway for our cars. IMO, use the motorcraft plugs... I prefer them, and you cant go wrong with Ford parts.
i like the NGK and autolite iridium's. i have the autolites in the 5.0 and love them, when i did the partial PI on the 4.6 i wanted the autolites, but the didnt have them and went with NGK and again i have no complaints.

Although I haven't changed my C.O.P. wires, I did replace my plugs last night and needless to say, I'm still having the same problem. To better give you guys an idea of what it's doing...as long as I gradually increase the speed, it runs just fine...but if I try to accelerate too quickly, it acts as if it wants to flood out and I'm losing HP.
I've taken it to Autozone and had them hook up a code reader and it came back with nothing as my check engine light has yet to come on. Pep Boys gave me the same results.
In my mind, this seems/sounds like I have a problem with one of my fuel injectors releasing more fuel into the cylinder than it can burn. If that be the issue, I have no problem purchasing a complete set and be done with it. I just don't want to purchase a set of injectors and continue to have this problem. If I must replace my injectors, what size of injectors am I to replace them with? I ask because I've seen where some 2003 GT's have 19lb injectors, 21lb injectors, and 24lb injectors. So...what size is the stock injector?
I was also informed, not just by the guy above me, that my throttle position sensor could be going bad on me.
Any comments/suggestions are greatly appreciated.
