Default Torque Converter Brand & Stall Speed

I'm looking into getting a PI Torque Converter with a 3000 Stall Speed for my currently NA Mustang GT with 3.73 Gears.

1.) Should I get a multi-disc in case I go with the Whipple FI in the coming years or would this hurt driveability on a NA car?

2.) I obviously want a lower 1/4 mile but, what differences (positive and negative) in daily driving should I expect?
And in inclement weather?

3.) Is this the best brand torque converter to purchase for our cars?

4.) What stall speed would you recommend for my application?

I'm definately do NOT want a trans brake or anything too serious.
