I had some aftermarket headlights on my 06 GT when I owned it, and them suckers fogged like mad. Condensation too. I want to replace the projectors and clear corners on my car with some smoked headlights to keep with the white/black scheme. I plan on later doing a saleen kit with the black saleen decals etc... Anyone know which companies headlights/foglight/corner combo does not fog/condensate?

I would think that routine maintenance of the lights would be the best defense against fogging, keep those suckers clean and you will get some good mileage out of them.

Condensing can be eliminated by merely "prepping" your new headlight housings prior to installation.  Most housings that I have come across have either sat for awhile, or are assembled quickly on an assembly line.  In other words, they are slapped together and then stored in a warehouse for distribution.  All you have to do is buy a tube of weather resistant silicon, and re-enforce the areas where they could possibly let air into the housing.

Here is a link to the silicone trick.  Although they explain how to "fix" this on headlights that you already have noticed condesation inside of, it is also advisable to do this BEFORE they condensate, ie. when they are new.
