I have Roush lowering springs on my '04 mustang, which caused me to sell my Torq Thrust rims in the first place. I am wondering if a 17x10.5 Cobra replice rim will fit on my car without rubbing? 17x9 up front of course, but will the 10.5s fit on the back without rubbing? 5 lug, 4.50" bolt pattern, +27mm offset. Thanks for any help!

Sure
Runnin' Saleen replicas 295/30/18"s x 10.5"s on '02 Saleen with 2" drop. I am not certain of off-set, but +27 sounds correct. I also have a 1/2" spacer on rear wheels to move out to edge of fender. I am considering getting my rims widened to 11.5"s and really pushing it with some 325's or maybe even 335's

I have the same car, a bit lower due to GR-40 suspension and 1/2" spacers to boot. I just did some searching and came up with many Saleen replica wheels and between +22 & +27 mm off-sets. Remember, the 10.5" wheel is 1/4" wider in each direction of hub, so off-set is the same (or very nearly) as the 10" wheels.

What tires should i buy? I want a 295 on the back, but cant find any good performance tires in that size for a 17" rim. Would a 285 look alright on a 10.5" rim?

I HIGHLY recommend Michelin PS2's as they are the best tire I have driven thus far in 25+ years of driving lowered cars and HWY 1 twisties . I just checked the Michelin site, and 315's are not available for 17" rims 275/40/17"s are the only option for 10.5"s and would not recommend them due to width as well as 40 series profile .
285's will fit on the new rim, but will probably look a little "stretched" to fill the width. I would, and WILL go, 315's on my 10.5"s later this year, so this is what I recommend to you. I am currently running 295's and the PS2's run a little "thin" on width relative to other brands. Do a little searching around on some of my posts in the last week or so in Tires & Wheels section, and I have a link to a '99-'04 Stang running 315's on 10.5" but is not lowered.
I am strongly considering having my rims widened so I can install 295/30's up front and possibly 325's or EVEN 335's out back. Would need to widen my fronts 1" (not sure if I can go that wide, but possibly with some tweaking) Would like to widen my rears 1" as well and think this is possible with some tweaking as well.

I have never run them, so I cannot say, sorry . In general, look for the lowest treadwear number you can afford to purchase and later replace. My PS2's are at 220. The Goodyear Eagle F1-D3's were 280 (Michelin is FAR, FAR superior than those) Read reviews on what kind of driving you do, and go from there.

I cannot tell you specifically what tire to purchase to be same diameter. You will need to look up the specs of your existing tires, and match the diameter as close as possible to new tires.
When I went from 225/60/15"s (25.6" diameter) to 245/40/17"s (24.2" diameter) on my '85 GT, many years ago, I lossed about 5 MPH of accuracy (if I remember correctly, was over 20 years ago). Those measurements are not the "actual" tires I was running, but some I just looked up on the net. I went over 1" smaller and was only off by 5 MPH, so just understand what you are getting and you will be fine. I hear that it is not a big deal to have speedo calibrated. Seems to me a hand-heald tuner is capable and would think that a good tire shop could do it for you or recommend someone who can.

I already have an SCT Xcal flash tuner, with a tune flashed in. So thats why it might just be easier to match the size instead of reflashing/calibrating
