What would you recommend to take care of a 2007 Mustang with Performance White clearcoat? I like lots of shine.

Have you claybarred the car yet?  If not, I highly recommend doing that to get all of the embedded contaminants out of the paint.  Next I would use a polish to clean the paint and bring out more shine and reflection. Now you can add a glaze to give the paint a wet and deep look, the glaze will also leave your paint feeling really slick.  Lastly I would top with a sealant to really make your white paint pop.  Here are the products that I would go with in order:

Wash
Claybar
Obsessive Detail Light Polish
Wet Glaze
Hyper Shine Sealant

I prefter those products for lighter colored paints. A sealant adds a lot of brightness,gloss, and reflection to lighter colored vehicles.  The glaze will really make the paint look deep and wet.

You don't really need to use a wax if you are using a sealant. A sealant is actually adds more protection than a wax too.  If you do prefer to use a wax it will go after the sealant.  Sealants can be layered over each other but they can't be put on over a wax because it won't bond right.  A wax will go over a sealant with no problem.

Sealants are starting to get more popular.  Sealants are more durable than a wax but lack the depth and wetness of wax, this is why a lot of people like to top sealants with a wax to get the best of both worlds.
I think if you add my acrylic glaze before the sealant you will get the wetness and depth you need without having to top it with a wax.  A sealant is just as easy to use as a wax too, my sealant goes on easy and comes off easy with no residue.  So do my polishes, glazes, and waxes.
