How long has it been running? How does it run? Does he have any issues with it?

I tend to believe that if somebody is determined enough, that they can do just about anything they want, necessity being the mother of invention and all.

helicoiled it down??? I don't think so, the 351 uses 1/2 head bolts so he would had to of drilled the holes bigger ......as a 302 uses 7/16 and to use 351 heads on a 302 you have to have a bushing kit/reducer installed in the holes wouldn't want to see what kind of jerry rig that was all he really needed to do was drill the holes out to 1/2 inch. it's perfectly fine done the way I explained as many aluminum heads for the 302 are really 351 heads that to use on a 302 you just order the bushing kit

I am assuming that the guy heli-coiled the block down to 7/16, then used 7/16 bolts or studs. I would think that this would be ok if he used ARP studs. In this case I think that the studs would be stronger than the stock 1/2" head bolts.

Like you, I think that if I were doing this I would first consider getting the head bolt holes on the GT40 heads drilled out, but maybe there is not enough meat on these stock castings?
