I have a 1995 Mustang GTS that came with the manual windows and manual locks. So how hard is it to change over to power locks and windows is it plug and play??? or do i have to do some wiring?

There is some wiring but its not too bad. Of course you need the power window motor and regulator, as you will need door lock actuater. You will also have to change door panels and need the switch.
