When I contacted Steeda, they said something like 35-40 ft pounds... I haven't done this yet as I haven't received the same answer from two sources...

That is the corect answer according to Ford Service manuals.

I forgot, I read a post in this forums saying you can use the same gaskets a long as you are careful when removing and reinstalling.

Be advised if you intend to order the blue valve covers from Steeda that the color they advertise as blue is totally misleading, the blue color is justone shade shy of being absolute black, I learned the hard way.

You would never want to torque valve covers 35-40 ft-lbs. That is a LOT of torque. 89 in-lbs sounds much more reasonable.

Are there torque wrenches designed for lbs-in? I've only seen ones in ft-lbs

Some smaller torque wrenches are graduated in in-lbs. But you can use a ft-lb wrench for an in-lb spec. Just divide the in-lbs, such as 89, by 12. This gives you approximately 7.5 ft-lbs.
