Look in a classified that isn't II-specific...They are already rarer than the earlier classics. Yes, some can still be had cheap, but some of the models are already climbing in value, even as restorable project cars. 15 years ago, I paid $450 for my 78 V8 T-top. Put a bit of work into it over the course of 6 months as a daily driver. I paid $250 for a 78 V6 coupe. Currently the only one that runs... (ironic, eh?) My 78 Ghia was a special find. Needs minor work (plus a rebuilt engine) but has valid potential for future value. My 77 Cobra, though, I paid over $1,100 for a car that hadn't run in two years, needed bodywork, hatch, inner fenders, no gastank, 4 flat tires, and rat crap sitting in old oil on the intake manifold...If it had more than just a few sections rusted on the shell, it'd be a basket case/parts car. Maybe they aren't as desired or in demand as the other classics, but they are definitely harder to find parts for or restore.
