Default 2006 16" rims, largest tire size?

Hi all,
I searched thoroughly and didnt find the answer I'm looking for.
I have a 2006 V6 Convertible mustang with the 16" knockoff type rims and 215/65r16 tires.

I'm going for the mini-tubbed/back-halfed look on my car.
I really am not interested in going to 20" rims, lowering it,or anything like that.
More interested in old-school fatties tucked under the fenders out back and skinny tires up front.

What is the largest and widest tire I can fit back there using the 16"x7" stock rims?

I also found replica rims in a 16x8 variety if need be for the rears.

I was hoping to get at least a 255/60 back there. I will eventually get a tuner to adjust the speedometer, etc..
And will eventually upgrade to a t-loc and 4.10's..

Any info would be greatly appreciated!!
