I have a 1997 Mustang GT that I recently bought and I took it to the shop to geta new water pump put on it and the mechanic noticed a knocking sound in the front right side of the car, he said the struts needed to be changed. What tools do I need and how hard would it be??

lets see...
you will need a jack to jack up the control arm so the spring doesn't shoot out at ya..
other than that it's only 2 bolts.

The difficulty would depend on your mechanical ability and the tools at hand.
If you have a jack, and common basic hand tools... the job is relatively easy...
For a mechanic it is only about a 1-2 hour job.... You do not need spring compressor if you have a jack and jack stands to helplower the control arm slowly...
Searching Google.com will bring up quite a few "How To" articles online...
