I autocrossed on 275/40 r17 on my 2005 mustang. They were Falken azenie 615's. I did a lot of research on this because everyone was saying that they would fall off the bead under hard cornering on the 8 inch wheel but I found on the scca website that for people to stay in stock class and be competitive they had to run 275's on 8" wheels. The last mustang to win scca nationals in stock class had 275 on 8" wheels. I found no strange wear problems and have never had one come off the bead under hard cornering even at lower pressures like 20 lbs of air pressure. I won my class everytime I raced with these tires.
I hope this helps with your decision

someone in the 2005, 2006, 2007 forum has some good pics of a 275/50/17 on the back of his car. Sorry I don't have a link.
By the way discount tire said a 275/55/17 would work fine on a 17x8 rim.
